Ingredients: 3 cups Nature’s Truth butter beans 1 tbsp. olive oil 1 lemon, zested and juiced 2 cloves garlic, minced 1/4 cup fresh parsley, chopped 1/4 cup fresh dill, chopped 1/4 cup red onion, finely chopped Salt and pepper to taste Mixed greens for serving (optional)
Instructions:
Cook 1 cup of butter beans, drain, and set aside. (Makes 3 cups of cooked beans).
In a large bowl, whisk together the olive oil, lemon zest, lemon juice, and minced garlic. Season with salt and pepper to taste.
Add the cooked and cooled butter beans to the bowl with the dressing. Stir in the chopped parsley, dill, and red onion. Toss gently to combine.
Serve butter bean salad on its own or over a bed of mixed greens. Garnish with parsley, if desired.
